The Inagawa River, whose headwaters originate on
Mount Oya-san, flows through the center of Inagawa Town, which is
covered for the most part by forested land. Blessed by nature, this
town has given rise to various industries. In particular, agar that
is made by taking advantage of the cold weather in winter is highly
prized in Kyoto as a superior product because it is produced according
to a time-honored process of manufacture. Inagawa Town is also known
for an abundance of other specialty goods, including chestnuts, whose
taste is evocative of autumn, high-quality shiitake mushrooms, and
local sake with a history that can be traced back to the Edo period. |
